The COVID-19 pandemic may prevent us from eating out this year for Mother’s Day, but there is no reason why your family can’t still celebrate mom with a delicious meal. Mother's Day is on Sunday, May 10, in case you were wondering.

Mom’s old fashioned pancakes

Ingredients:

  • 3 ½ teaspoon baking powder
  • 1 ½ cups all-purpose flour
  • 1 tablespoon white sugar
  • 1 ¼ cups milk
  • 1 teaspoon salt
  • 1 egg
  • 3 tablespoons butter, melted
  • *optional: chocolate chips, banana, berries, nuts

Directions:

  1. In large bowl sift together flour, baking powder, salt and sugar. Make a well in the dry mixture and pour in the milk, egg and butter. Mix until smooth. *Add in optional ingredients as desired.
  2. Heat a large greased pan on medium heat. Drop mixture ¼ cup at a time into pan to make 8 pancakes. Cook about 5 minutes per side, until golden brown.
  3. Top with fruit, nuts, peanut butter, maple syrup, honey or butter as desired.

Simple banana pancakes

Ingredients:

  • 1 large egg, beaten
  • 2 tablespoons quick oats
  • 1 medium ripe banana
  • *optional: chocolate chips, banana, berries, nuts

Directions:

  1. Mash banana with a fork in a bowl until smooth. Add in oats and egg and mix well. *Add in optional ingredients as desired.
  2. Heat a large greased pan over medium heat. Pour 3 small pancakes onto pan. Cook 4 minutes per side, until golden.
  3. Top with nuts, peanut butter, maple syrup, honey or butter as desired.

Cheesy egg waffles

Ingredients:

  • 1 large egg
  • ½ cup finely shredded mozzarella
  • *optional: maple syrup, honey, butter

Directions:

  1. Plug in waffle maker to heat.
  2. Whisk egg in a bowl and stir in cheese.
  3. Spray waffle maker with nonstick spray. Pour ½ mixture into waffle maker and heat until golden brown.*Top with maple syrup, honey or butter

Momma’s French toast

Ingredients:

  • 4 Eggs
  • ½ cup milk
  • 1 teaspoon cinnamon
  • ½ teaspoon vanilla extract
  • 8 slices bread

Directions:

  1. Heat greased pan on medium heat.
  2. Whisk together eggs, milk, vanilla extract and cinnamon.
  3. Dip each slice of bread separately into egg mixture until fully covered.
  4. Cook each slice on pan until golden brown.
  5. Top with fruit, nuts, peanut butter, maple syrup, honey or butter as desired.

Mother’s Day muffins

Ingredients:

  • 3 tablespoon baking powder
  • ½ teaspoon salt
  • ¾ cup white sugar
  • 2 cups all-purpose flour
  • 1 egg
  • 1 cup milk
  • ¼ cup vegetable oil
  • *optional: chocolate chips, berries, dried fruit, nuts, bacon, cheese

Directions:

  1. Preheat oven to 400 F.
  2. Stir flour, baking powder, salt and white sugar in a large bowl. Make a well in the center. In a small bowl beat eggs and stir in milk and vegetable oil. Pour wet mixture into the well of dry ingredients. Mix quickly and lightly with a fork, but do not beat. *Gently mix in any optional add-ins.
  3. Pour batter into lined or greased 12-cup muffin pan. Bake for 25 minutes or until golden.

No fuss breakfast cookies

Ingredients:

  • 2 medium ripe banana
  • 1 cup of oatmeal
  • *optional: raisins, dried cranberries, nuts, chocolate chips

Directions:

  1. Preheat oven to 350 F.
  2. Mash bananas with a fork in a bowl until smooth. Add in oats and mix well. *Add in desired mix-ins.
  3. Grease cookie sheet. Drop mixture by large tablespoons onto cookie sheet.
  4. Bake for 12-15 minutes, until golden brown on the bottom and set. Transfer to a plate or wire rack for cooling.

Easy granola recipe

Ingredients:

  • ½ cup brown sugar
  • ½ cup honey (can use maple syrup)
  • ¼ cup oil (canola, vegetable, or coconut)
  • 2 cups oatmeal
  • ½ teaspoon cinnamon
  • ½ teaspoon salt
  • *optional: nuts, seeds, dried fruit, chocolate chips

Directions:

  1. Preheat oven to 250 F.
  2. Combine brown sugar, honey or maple syrup, and oil in a small saucepan over medium heat. Cook stirring occasionally until sugar is dissolved.
  3. Mix oats, cinnamon and salt in a large bowl. Pour heated sugar mixture over oats and mix well until oats are evenly coated. *Mix in nuts or seeds.
  4. Spread mixture onto greased cookie sheet and press down.
  5. Bake for 1 hour, stirring every 15 minutes. Let cool completely before breaking apart. Add in dried fruit or chocolate chips as desired.

Yummy yogurt parfait

Ingredients:

  • Plain or Greek yogurt
  • Granola
  • Fresh fruit or thawed frozen fruit
  • Nuts

Directions:

  1. Fill bowl with yogurt. Top with granola, fresh fruit or thawed frozen fruit, and nuts as desired.

Healthy omelette

Ingredients:

  • Eggs
  • *optional: cheese, sausage, bacon, ham, olives, mushrooms, spinach, broccoli, tomato, onions

Directions:

  1. Heat greased pan on medium heat.
  2. Whisk eggs in a bowl. Pour eggs into heated pan and allow them to completely fill the pan.
  3. Once eggs are almost set with the top still a little moist, cover half the omelet with desired fillings. Use a spatula to flip the other side onto the filled half.
  4. Cook for a couple minutes and slide onto plate.

Breakfast egg sandwich

Ingredients:

  • Eggs
  • Bread: wraps, English muffin, bagel, bread, croissant, biscuit
  • Breakfast meats: sausage, bacon, ham
  • *optional add-ins: cheese, sausage, bacon, ham, olives, mushrooms, spinach, broccoli, onions, tomato, salsa

Directions:

  1. Heat greased pan on medium heat.
  2. Whisk eggs in a bowl and add any optional ingredients.
  3. Pour eggs into heated pan and scramble, moving eggs constantly with spatula.
  4. Heat breakfast meat in a separate pan.
  5. Prepare bread on a plate and top with cooked eggs and optional toppings. Place other half of bread on top and return to pan to brown on both sides. If using a wrap, place eggs and toppings in the center and tightly fold the wrap. Place wrap in pan and brown on both sides.
