This easy one-skillet meal will have dinner on the table in 30 minutes or less. And, it’s a family-friendly meal that is much quicker and healthier than takeout.

Ingredients

  • 1/3 cup Green Goddess salad dressing
  • 1 pound boneless, skinless chicken breast, diced
  • 2 teaspoon dried oregano
  • 1 1/4  cup broccoli florets, chopped
  • 1 1/4 cup bell peppers, chopped
  • 1 1/4 cup carrots, chopped
  • 16 oz. low-sodium chicken stock
  • 2 cups instant brown rice
  • Zest of one lemon

Directions

  1. Heat dressing in a large nonstick skillet on medium heat.
  2. Add chicken pieces and sprinkle with oregano. Cook five minutes, stirring once.
  3. Add vegetables and stock; simmer five minutes.
  4. Stir in rice and cover; simmer five minutes.
  5. Turn off heat and let stand, covered, five minutes or until liquid is completely absorbed.
  6. Garnish with lemon zest and finish with the freshly squeezed lemon juice.
